Dough products: 250 g of rye flour, 300 g of white wheat flour, 250 g of honey, 20 g of ammonium, 100 g of sugar, 4 eggs. For glaze: 2 egg whites, 200 grams of sugar, a few drops of vinegar, 2 tbsp. tablespoons of powdered sugar, salt. Rye flour in a deep dish is well stirred with a wooden spoon with hot honey.

Knead the dough from white wheat flour, ammonium, sugar and eggs. Mass of rye flour and honey mixed with wheat dough and knead.

The next day, the dough (it should be of medium consistency) is cut into 3-4 parts, rolled out on a board of flour, into a layer 0.5 cm thick and cut out small round biscuits. Lay them 2-3 cm apart from each other in a pan, lightly oiled, and bake in a hot oven first on the top, then on the lower fire for 5-7 minutes. You can not often open the oven, but you must make sure that the biscuits are not burnt.

Of the products recommended by the recipe, you get 5-6 biscuit biscuits.

Ready to put the biscuits in a deep bowl, pour a warm glaze and mix it lightly, so as to make a good breeze. In a baking sheet, lubricated with oil, lay the biscuits and, with the oven door open, dry first one side, then the other.

A way of preparation of a glaze: from a sugar and 5 tea spoons of water to weld a syrup. When it starts to bubble, add egg whites, whipped into a foam, in small doses, whilst not stopping. Add vinegar, salt and 2 tbsp. tablespoons of powdered sugar.

Ready to put the biscuits in a deep dish, pour a warm glaze and mix a little, so they are well covered with glaze. Put the biscuits on a sheet, oiled, and with the oven open, dry them first with one, then on the other side.

Honey biscuits “Transylvania”.

From flour, honey and eggs, cinnamon, cloves and vanilla sugar, knead the dough, swing it with a thin layer and cut out the round crusts with forms or a glass. Cover the surface of the biscuits with a yolk and decorate with halves of peeled almonds. Bake the cookies at medium temperature.

Dough: 6 tablespoons of honey, 450 g of rye flour, 4 eggs, 5 grams of ground cinnamon, 2-3 pcs. cloves (grind to powder), a packet of vanilla sugar, almonds.
