Smokehouse for draining
The smokehouse was made of a metal box with a wall thickness of 2 mm. The upper part is open, and so that boxes with plums do not slide out, wooden slats 5 cm wide are perforated along the perimeter. A hole for the firebox (height and width 30 cm) was cut down at the bottom of the smokehouse. In order to prevent the flame from reaching the dryer and boxes, an extinguisher was inserted above the torch from a curved arc and a tin plate, perforated like a sieve. Drying boxes I do with 20-boards of millimeter thickness around the perimeter of the metal box of the smokehouse, and 10 cm in height. Instead of the bottom, I fill 20 rounded rods (you can have another quantity, but do not drop dried fruit through the intervals). In such a box holds a bucket of drains. Simultaneously, for smoking you can put up to ten boxes.

The upper one is covered with burlap, and when it rains, there is also a tin bent with a dimension of 80X80 cm bent by an arc.
Firewood for smoking is desirable to use from fruit trees: apricots, peaches, plums, higher cherries, etc. It is important not to allow intensive burning of firewood. Boxes with plums are advisable to periodically change places and, as the fruit dries up, take them out for drying in the sun. Then smoked and dried for two or three days in the sun, the plums are washed in sugar solution (in 1 liter of water I pour 1 kg of sugar and boil to complete dissolution). The yield of finished products is 30-35% of the weight of fresh fruit.
The best varieties for smoking – Hungarian usual, Italian, Renlend Altana, Peach early and others with a bone, which separates.
For long-term storage of plums I use a dense wooden box or a glass container. So they can be kept for several years.
For the manufacture of a smokehouse the shells of used refrigerators or washing machines will agree, it is possible to make a furnace with burnt bricks and other materials.
