Honey against mold
In the surrounding air there is a huge amount of spores of mold fungi. Under favorable conditions (at the appropriate temperature, humidity and nutrient medium) spores rapidly germinate, the mycelium develops, penetrating into the depth of the substrate. Therefore, products such as flour, sugar, pasta, jam, jam, soft sweets, fruit waters, get an unpleasant smell, taste and appearance. Unlike other food products, honey, when properly stored, never molds.
The researcher of the mycology laboratory investigated the antimycological properties of buckwheat honey and 20 honey samples from the number obtained by the express method. All these samples were infected with ten different molds isolated from food. Despite the fact that the composition of honey includes proteins, carbohydrates, vitamins, minerals and other substances necessary for the life of any living cell, molds introduced into honey, perished. Apparently, honey contains substances that have not only antimicrobial, but also anti-mold properties.
